Asian Slaw - To Try









* 1 bag coleslaw blend or broccoli slaw blend

* 1 bunch scallions

Dressing:
* 1/3 cup olive oil
* 2 Tbsp toasted sesame oil
* 1/3 cup rice wine vinegar (unseasoned or else use less sweetener)
* 1-2 tablespoons Lakanto Monkfruit Golden (or sweetener of choice)
* 3 tablespoon Coconut Aminos
* 2 garlic cloves, finely minced
* 2 Tbsp ginger, finely chopped or zested
* 1 tsp sea salt
* Squirt Sriracha

Start by shredding the cabbages. I recently bought the thin slicing blade for my food processor and I really don’t know why I waited so long! If you have that, use it! Otherwise slice as thin as you can by hand, or in processor or with mandolin etc.

The next step is not a must, but really does make it better so your dressing doesn’t get watered down. That is to sprinkle salt over the cabbage, mix it up by hand, in fact massage it for a few minutes to really get the salt into the veggies and then let it sit for 15 minutes while you prepare the rest of the ingredients. Then squeeze the jabeezies (yes, that’s a word!) out of it to drain the water. Look at the pictures to see what a difference it makes in volume!! It also makes the cabbage a little more tender, which I prefer.
Slice the scallions and add to drained cabbage.

Mix up the dressing and pour over veggies.

*don’t feel like you have to use these exact veggies - last time (and in these pictures) I shredded radish in place of red cabbage and cilantro in place of scallion and it was just as delicious - it’s really all about the dressing and the crunch of the cabbage).

Roasted Romaine

Ingredients
  • 1 head of romaine lettuce
  • 3 Tbsp. olive oil
  • 1 Tbsp. balsamic vinegar
  • 1 tsp. grated Parmigiano Reggiano
  • Salt and pepper to taste
Instructions
  1. Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil.
  2. Using a sharp knife, split the romaine lettuce down the middle. Lay it on the baking sheet. Take one tablespoon of olive oil and drizzle it over top of the two halves of romaine.
  3. Roast in the oven for 10 minutes until the romaine has wilted a bit and is starting to brown.
  4. Before serving, prepare your dressing. Combine remaining two tablespoons of olive oil and one tablespoon of balsamic vinegar and mix well to combine. Drizzle over top of the two halves of romaine.
  5. Sprinkle with parmesan cheese and salt and pepper to taste.

How to Freeze Avocados


Avocados can be frozen for 3-6 months, but they must be spritzed with fresh lemon or lime juice to prevent discoloration  

In Halves

Simply cut avocados in half lengthwise, peel them (either before or after cutting), put them on a plate, spritz each half with some lemon or lime juice. You don’t need to douse the avocados, but you do want to make sure that you are pretty much coating them.
A good rule of thumb would be about 2 tsp lemon or lime juice per each large avocado, or 1 tsp for each small one. 
Place avocado halves in a Ziplock plastic storage bag and press as much of the air as possible, or use a Food Saver System bag. 

Puree

Simply toss your avocado into the food processor, squeeze in some lemon juice, and process to desired texture. Freeze in a Ziplock bag, removing as much air as possible, or freeze in a Food Saver System plastic bag  

Guacamole

If you would like to have guac on the fly (and on the cheap), this is a great way to go.
Any guacamole recipe will work. although the texture will be better after freezing if you avoid tomatoes in the recipe.
