Creamy Protein Oatmeal ****

Made it with 2 eggs, but I think it will be better with just one egg, so I'll try that next time. After making it, I found the recipe below, so I'll also try chia seeds if I make it again.  



1/2 cup rolled oats

1 cup water (or 1/2 cup water + 1/2 cup milk)

1 egg, beaten

Sea salt


Add oats and water to a saucepan, stir, and cook over medium heat until it reaches a boil.  Reduce heat and cook for 3-5 minutes, stirring occasionally.  Reduce heat to low and stir in the beaten egg.  Cook, stirring constantly, for 2-3 minutes.  Add sea salt to taste.

Eggs and Peas with Onion Cream Sauce *****

 Eggs and Peas with Onion Cream Sauce  


1 medium onion, sliced (about 1/2 cup)

1 cup water

8 oz frozen green peas (about 1 cup)

8 hard-boiled eggs, cooled, shelled, and chopped

1/2 cup plain whole milk yogurt

1/4 cup coconut milk

4 oz cream cheese

1/2 tsp sea salt

Place the sliced onion in a small saucepan with the water, bring to a boil and boil for 5-10 minutes until onion is tender and most of the water has evaporated.  

Meanwhile, place peas in a 2-quart casserole.  

Place hard-boiled eggs over the peas.  

When the onion is tender, place it in a small food processor (with leftover water) and puree.  

In the warm saucepan, add the onion puree, yogurt, coconut milk, and cream cheese.  Whisk over low heat. and simmer gently for a minute or so. and Pour over eggs and peas.  

Bake at 350 degrees for 15 minutes.

Sauce will be somewhat thin but thickens the next day.

Italian Egg Loaf *****

 Very good.  Would like to try it with bacon or pork belly, or minced broccoli for some texture.



8 eggs, room temp

8 ounces cream cheese, softened at room temp

1 stick butter, softened at room temp

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp oregano

1/2 tsp sea salt


Blend together eggs, cream cheese, butter, garlic powder, onion powder, oregano, and sea salt until smooth and well combined.

Pour the mixture into a 2-quart rectangular baking dish, lined with parchment paper.

Bake at 350 for 25 minutes.  

Cool, cut into bars, and freeze.

Lemon Bars *****

 


8 eggs

8 ounces cream cheese, softened

1 stick butter, softened

2 tsp lemon extract

1 slightly rounded tsp powdered monk fruit

A few additional drops of monk fruit extract


Blend together eggs, cream cheese, butter, lemon extract, and monk fruit until smooth and well combined.

Pour the mixture into a 2-quart rectangular baking dish, lined with parchment paper.

Bake at 350 for 25 minutes.  Remove from oven immediately.

Cool and refrigerate

Keto Egg Bake with Cream Cheese *****

 




Keto Egg Bake with Cream Cheese

This is the ultimate easy egg bake or crustless quiche recipe. You make one egg mixture and choose your own veggies, meats, cheeses, and spices to go in it.

Ingredients

Egg Mixture (for one egg bake to serve 3-4 people, multiply as necessary):

  • 4 eggs
  • 4 oz cream cheese
  • large pinch of salt

Topping Options:

  • 1/2 tsp dill, basil, oregano, parsley, etc.
  • 1/2 tsp dried onion and/or dried minced garlic
  • 1/2-1 cup of shredded or crumbled cheese (cheddar, mozzarella, feta, etc.)
  • sauteed veggies
  • cooked meats

Instructions

  • Preheat oven to 350.
  • Put the egg mixture ingredients in a blender and blend until smooth.
  • Spray a baking dish with cooking spray. Put the toppings of your choice in the baking dish: meat or vegetables on the bottom, then sprinkle on the cheese, finally sprinkle on seasonings. Pour the egg over the fillings.
  • Bake for 30 min or until the easy egg bake isn’t jiggly and the edges are golden brown.

After the keto, bake has cooled, and you put them in airtight containers, refrigerate for up to 4 days. Or you can freeze it for two months. Before reheating, it’s best to store the casserole bake in the fridge overnight if frozen.

Low Carb Ricotta Egg Bake *****

 




  • 1 tsp avocado oil
  • 3 cups baby spinach, rough chop
  • eggs
  • 1 cup ricotta
  • 1/2 cup milk
  • 5 slices bacon, cooked + chopped
  • salt + pepper, to taste
  • 1/2 cup shredded cheese (mozzarella, etc.)

Instructions

  • Preheat oven to 350℉. Line a 9x13 baking dish with parchment paper.
  • In a large skillet, heat oil over medium heat. Sauté spinach for 2 minutes longer. Remove from heat and drain well.
  • In a large bowl, whisk together the eggs, ricotta and milk. Stir in the bacon crumbles, salt, pepper, shredded cheese. and spinach mixture until combined. Pour into baking dish. Sprinkle top evenly with a little more shredded cheese. Bake uncovered for 30-35 minutes or until toothpick comes out clean. Let sit for 8-10 minutes and cut into squares.

6 eggs, cooked the night before and chilled overnight

4 heaping Tbsp homemade mayo 

2 stalks celery, finely chopped

Herbed Ricotta Omelet - to try

 




1 Tbsp butter

2 large eggs

2 Tbsp cream

1/4 c ricotta 

2 Tbsp parmesan 

1/8 tsp basil

1/8 tsp oregano

Real Salt to taste


In a medium skillet, melt butter over medium heat.


In a small bowl, whisk together eggs and cream.

In a separate small bowl, mix together ricotta, parmesan, basil, and oregano. 

Pour egg mixture into the heated skillet and leave it there to begin cooking through.  I tend to cover mine on and off with a large heat safe dish as need be to be sure it's cooking as well on the top as it is the bottom.

Once the egg is nearly done, salt it to taste and then place the cheese mixture on one side of the egg and fold it over to form the omelette.

Cook for another minute or two.  Serve immediately.

Deviled Egg Salad *****

Tried making it with ricotta instead of mayo, which I've done with other egg salad recipes and chicken salad.  I didn't care for it in this recipe; it was better with mayo.




  • 12 hard-boiled pastured eggs
  • 6 slices bacon, crumbled
  • 3/4 cup avocado oil mayonnaise 
  • 1/4 cup diced scallions, green part only
  • 1 Tbsp Dijon mustard
  • 1/4 tsp smoked paprika
  • 1/4 tsp sea salt
  • Romaine lettuce leaves 

Instructions

  1. Peel and chop eggs and place them in a large bowl.
  2. Add remaining ingredients; stir to combine.
  3. Top with extra bacon and refrigerate until ready to serve in romaine leaves

Breakfast Casserole *****

 Really good.  The second time I made it, I cooked the whole two pounds of beef/pork, but only made half of the recipe.  I used the remaining meat for other meals or for eating plain.  





1 lb ground beef

1 lb ground pork

7 eggs

1/4 cup coconut milk or heavy cream

Seasoning (salt, garlic) to taste

2 cups shredded Kerrygold Reserve Cheddar cheese


Preheat oven to 375 degrees.

Place beef and pork in a large cast iron skillet.  Season with salt and garlic powder. 

In a bowl, whisk eggs and coconut milk or heavy cream, along with salt to taste.  

Place meat in an 11 x 7" baking dish.  Pour egg mixture over top.  Top with shredded cheese.

Bake for 25 minutes.

Basted Eggs *****





  • Lard or Butter
  • 3 large eggs
  • 3 Tbsp hot water

  1. Melt lard or butter in a skillet over medium heat.
  2. Crack  the egg into a bowl.
  3. When the lard or butter has melted, add the eggs to the skillet.
  4. Cook until whites are nearly set; add water to the skillet.  Cover.
  5. Continue cooking until the whites are set and the thin layer of whites
  6. that top the yolks have turned white as well.

Heston's Scrambled Eggs

 



Heston's Scrambled Eggs

3 large eggs
80g butter, divided
15g milk
15g cream
salt and pepper

Place eggs, 20g butter, milk, cream, and salt in a heat resistant bowl.  Stir gently but don't whisk. Boil water in 
a saucepan. When the water has started boiling, place the bowl on top of the pan (make sure the water doesn't touch the base of the bowl). With a spatula, gently stir the mixture until it starts to curdle. Take it off the heat and plate.


Brown Butter
Heat remaining 60g butter in a pan over low heat. Swirl the butter around until it melts and then starts to brown and smell nutty. Take it off the heat and strain through a coffee strainer. Spoon over the eggs.

Fresh Egg White Wraps *****

Good flavor.  Stuck to the ceramic griddle, so I make them on the electric griddle.

  


Egg White Crêpes

Ingredients
  • A little less than 1 cup egg whites (whites of 6 lge eggs)
  • 2 Tbsp beef gelatin powder 
  • Real Salt to taste
  • Lard or Tallow for cooking

Instructions
  1. Heat griddle to 375 degrees and brush lightly with the cooking fat of your choice. Whisk together egg whites and gelatin until combined and then use an immersion blender to get the batter smooth and frothy. 


  2. Pour 1/3 of the batter onto preheated griddle and spread gently with the back of a mixing spoon until the wrap is 5-6 inches across. Be careful not to leave any thin spots. Allow the wraps to cook for 2 minutes or until the edges start to curl up and the bottom becomes lightly brown. Flip and cook for 2 more minutes. Repeat with the rest of the batter.

Cloud Eggs - to try



3 eggs, separated

Salt to taste


Preheat oven to 350 degrees.

Whisk the egg whites until stiff peaks form.  Place in 3 piles on a baking sheet.  (Greased? Parchment?)

Use a spoon to create an indentation in the center of the egg white pile.  Place a yolk in each indentation.  

Bake until lightly browned, about 10 minutes.  Season to taste.

Bacon Beef & Egg Frittata

 



1/2 lb bacon

1 lb ground beef 

6 (12 oz) eggs

Redmond's Real Salt


Cut the bacon into 1/2" pieces.  Fry in a 12" nonstick skillet until almost done. When almost fully cooked, push bacon to the side of the pan, and add the ground beef.

Break up the ground beef while it cooks in the bacon fat.  When it's almost done, mix in the bacon pieces.

Break eggs into a glass 2-cup measuring cup.  Add salt to taste.  Whisk well.

Add eggs to the skillet.  Reduce heat to low, cover the pan with a splatter screen, and cook for 10-15 minutes, checking frequently, until the eggs are cooked through.

Season and enjoy.

Egg Lemon Bars *****

 I made both of these recipes.  Both were good.  I liked the sweetness level of the second recipe better, so I changed the first recipe from 3 Tbsp sweetener (54 drops monk fruit) to 4 Tbsp (72 drops monk fruit).

  • 6 eggs
  • 3 oz cream cheese
  • 3 Tbsp butter
  • 3 Tbsp homemade mayonnaise
  • 1 tsp lemon extract
  • 72 drops 100% monk fruit (equivalent to 4 Tbsp sweetener)
  • Real of Pink Himalayan salt to taste

  1. Preheat oven to 350
  2. Put all ingredients into a large blender
  3. Blend until frothy
  4. Line a square glass baking pan (or a small rectangular pan) with parchment. 
  5. Pour mixture into pan
  6. Bake for 30 minutes 
  7. Cool and cut into 12 equal portions

2 oz cream cheese
4 Tbsp butter
2 Tbsp homemade mayonnaise
1 tsp lemon extract
1 tsp vanilla extract
Real or Pink Himalayan salt

Egg White Tortillas *****



Egg White Tortillas (makes 3 small or 2 large tortillas)

Ingredients
  • 1/4 cup + 1 tbsp water 
  • 1 tbsp beef gelatin powder 
  • 3 tbsp egg white powder 
Instructions
  1. Heat a griddle to 375 degrees and brush lightly with the oil/cooking fat of your choice. 


  2. Add the water to a bowl and sprinkle gelatin powder over the top of the water. Add in egg white powder and whisk until combined and a bit frothy. 


  3. Pour 1/3 of the batter (or 1/2 if you're making two larger wraps) onto preheated griddle and spread gently with the back of a ladle or mixing spoon until the wrap is 5-6 inches across. Be careful not to leave any thin spots. 


  4. Allow wraps to cook for 1-2 minutes or until the edges start to curl up. Flip and cook for 1-2 more minutes. Repeat with the rest of the batter.
