Simplest Meatballs

 

2 tbsp tallow

9 oz ground beef

Real Salt to taste


DIRECTIONS:

1. Shape 8 meatballs and fry them in the tallow over medium heat.

2. Cover, but turn them occasionally, for about 6 minutes until cooked through.




Nutrition facts per one serving: 53g fat, 52g protein, 0g total carbs, 0g fiber, 690 calories, 70% fat, 30% protein, 0% carbs

Breakfast Casserole *****

 Really good.  The second time I made it, I cooked the whole two pounds of beef/pork, but only made half of the recipe.  I used the remaining meat for other meals or for eating plain.  





1 lb ground beef

1 lb ground pork

7 eggs

1/4 cup coconut milk or heavy cream

Seasoning (salt, garlic) to taste

2 cups shredded Kerrygold Reserve Cheddar cheese


Preheat oven to 375 degrees.

Place beef and pork in a large cast iron skillet.  Season with salt and garlic powder. 

In a bowl, whisk eggs and coconut milk or heavy cream, along with salt to taste.  

Place meat in an 11 x 7" baking dish.  Pour egg mixture over top.  Top with shredded cheese.

Bake for 25 minutes.

The Best Oven-Baked Burgers *****

 8.7.24   Very good!  I liked these much better than the stove-top version.




  • 6 beef patties 
  • Himalayan pink salt or Real Salt
  • Garlic powder, opt.
  • Cheese, opt.



  • Preheat convection oven to 375 degrees Fahrenheit
  • Cover a baking sheet with aluminum foil, topped with parchment.
  • Generously season one side of the burgers with salt and optional garlic powder.
  • Place burger patties on baking sheet, spice side down.
  • Sprinkle more salt on each burger.  Sprinkle with garlic, if using.
  • Bake for 18 minutes. 
  • If desired, place one slice of cheese on each burger and bake an additional minute or until cheese has melted.

Bacon Beef & Egg Frittata

 



1/2 lb bacon

1 lb ground beef 

6 (12 oz) eggs

Redmond's Real Salt


Cut the bacon into 1/2" pieces.  Fry in a 12" nonstick skillet until almost done. When almost fully cooked, push bacon to the side of the pan, and add the ground beef.

Break up the ground beef while it cooks in the bacon fat.  When it's almost done, mix in the bacon pieces.

Break eggs into a glass 2-cup measuring cup.  Add salt to taste.  Whisk well.

Add eggs to the skillet.  Reduce heat to low, cover the pan with a splatter screen, and cook for 10-15 minutes, checking frequently, until the eggs are cooked through.

Season and enjoy.

Burgers in the Air Fryer *****

 



2 lbs ground beef

Real Salt to taste

Garlic Powder to taste, opt.

Onion Powder to taste, opt.


  • In a medium bowl, combine ground beef and Real salt, and spices, if using.
  • Form into 6 (5-oz) patties, about 1/2" thick. Make a small indent in the middle of the patty with your thumb. 
  • Preheat the air fryer to 370°F. Add patties in a single layer to the basket.
  • Cook for 6 minutes. Flip burgers over and cook an additional 3-5 minutes or until beef reaches 160°F.
