Keto Crab Cakes


1 Pound crab meat 1/2 cup pork rind crumbs 2 eggs 3 T mayo    2 t Dijon mustard 1 t Worcestershire sauce 1 t Old Bay seasoning 1/4 t Redmond or Pink Himalayan salt 1/2-1 t celery salt 1- 1 1/2 Tbsp dried Parsley Avocado oil for frying Add 2 eggs to yellow mixing bowl and whisk. Mix all other ingredients but crab together and stir until well incorporated, Break up crab and fold in until combined. Heston's Scrambled Eggs

 



Heston's Scrambled Eggs

3 large eggs
80g butter, divided
15g milk
15g cream
salt and pepper

Place eggs, 20g butter, milk, cream, and salt in a heat resistant bowl.  Stir gently but don't whisk. Boil water in 
a saucepan. When the water has started boiling, place the bowl on top of the pan (make sure the water doesn't touch the base of the bowl). With a spatula, gently stir the mixture until it starts to curdle. Take it off the heat and plate.


Brown Butter
Heat remaining 60g butter in a pan over low heat. Swirl the butter around until it melts and then starts to brown and smell nutty. Take it off the heat and strain through a coffee strainer. Spoon over the eggs.

Eggshells

 



Eggshells consist of 95% calcium carbonate which make them very similar to our bones and teeth. This also means that we can consume them to strengthen the same!
By crushing them into powder you can add them to broth or stocks and some folks put them in their homemade toothpaste for the pearly whites!
Did you know that if you put them in ACV, you can make a tincture that relieves acid reflux and irritated and itchy skin?
Other uses for eggshells are:
• compost them!
• put them back in your chicken feed for healthier hens
• use them in the garden to deter certain pests like snails or slugs
If you have enough add them to your mulch

The Best Oven-Baked Burgers *****

 8.7.24   Very good!  I liked these much better than the stove-top version.




  • 6 beef patties 
  • Himalayan pink salt or Real Salt
  • Garlic powder, opt.
  • Cheese, opt.



  • Preheat convection oven to 375 degrees Fahrenheit
  • Cover a baking sheet with aluminum foil, topped with parchment.
  • Generously season one side of the burgers with salt and optional garlic powder.
  • Place burger patties on baking sheet, spice side down.
  • Sprinkle more salt on each burger.  Sprinkle with garlic, if using.
  • Bake for 18 minutes. 
  • If desired, place one slice of cheese on each burger and bake an additional minute or until cheese has melted.

Au Jus

 




  • 2 1/4 cups beef broth
  • 1/4 cup beef drippings
  • Real Salt to taste


  • Place medium saucepan on stovetop over high heat. When saucepan is warm, add beef broth and beef drippings.
  • Whisk ingredients together until incorporated, then bring mixture to boil. Once mixture begins to boil, reduce heat to medium-low. Simmer mixture 5 minutes.
  • After 5 minutes, taste mixture season to taste. Strain the jus through a fine mesh sieve and serve.

Bone Broth Latte *****

 I was surprised how much I enjoyed this!  I've seen recipes that call for much more butter, and I doubt my stomach could handle that!  I may try it with 1 Tbsp butter instead of 1 tsp.


1 cup Bone Broth

1 tsp Grass-fed Butter [try using 1 Tbsp butter?]

Real Salt to taste


FAT:

Blending in a bit of fat can make an incredibly rich bone broth—both in flavor and texture. Think of it as the broth version of Bulletproof coffee. Add a teaspoon of grass-fed butter or ghee, coconut oil, or coconut butter. Blitz the fat and about a third of a serving of the warm broth in a Vitamix and pour it over the rest of the broth for a latte-like experience.


ACID:

Some form of acid will balance that fat and round out the intense umami flavors from long-cooked bones. Some bone broth recipes call for apple cider vinegar to help extract minerals from the bones while cooking, but by the time you’re ready to sip, that bright tang will have cooked off. Finishing your broth with apple cider vinegar and fresh citrus juice and zest (lime, regular lemon, Meyer lemon, even orange) adds a wonderful zip that wakes everything up.
