Egg White Tortillas (makes 3 small or 2 large tortillas)
- 1/4 cup + 1 tbsp water
- 1 tbsp beef gelatin powder
- 3 tbsp egg white powder
Heat a griddle to 375 degrees and brush lightly with the oil/cooking fat of your choice.
Add the water to a bowl and sprinkle gelatin powder over the top of the water. Add in egg white powder and whisk until combined and a bit frothy.
Pour 1/3 of the batter (or 1/2 if you're making two larger wraps) onto preheated griddle and spread gently with the back of a ladle or mixing spoon until the wrap is 5-6 inches across. Be careful not to leave any thin spots.
Allow wraps to cook for 1-2 minutes or until the edges start to curl up. Flip and cook for 1-2 more minutes. Repeat with the rest of the batter.
