I made both of these recipes. Both were good. I liked the sweetness level of the second recipe better, so I changed the first recipe from 3 Tbsp sweetener (54 drops monk fruit) to 4 Tbsp (72 drops monk fruit).
- 6 eggs
- 3 oz cream cheese
- 3 Tbsp butter
- 3 Tbsp homemade mayonnaise
- 1 tsp lemon extract
- 72 drops 100% monk fruit (equivalent to 4 Tbsp sweetener)
- Real of Pink Himalayan salt to taste
- Preheat oven to 350
- Put all ingredients into a large blender
- Blend until frothy
- Line a square glass baking pan (or a small rectangular pan) with parchment.
- Pour mixture into pan
- Bake for 30 minutes
- Cool and cut into 12 equal portions
