Asian Rice Bowl ****



Avocado Oil

2 oz broccoli, chopped

2 oz Napa cabbage, thinly sliced

2 celery ribs, sliced on the diagonal

2 scallions, sliced on the diagonal

3 garlic cloves, pressed

2 pastured eggs, scrambled with a splash of water

6 oz frozen Cauliflower Rice

2 Tbsp Coconut Aminos

Smoked sea salt to taste



Heat a large skillet; spray with avocado oil.  Cook broccoli, Napa cabbage, celery, and garlic for 5-10 minutes until tender.  Add scallions, cauliflower rice, and coconut aminos.

Push veggies to the sides of the pan; add eggs and cook until done.  Adjust seasonings.
