Grilled Salmon + Avocado Salsa
Salmon:
- 4 salmon fillets
- 1 tsp granulated garlic
- Sea salt, to taste
- Freshly ground black pepper, to taste
- 2 Tbsp avocado oil
Avocado salsa:
- 2 ripe avocados, chopped into small pieces
- 1 small red onion, small diced
- 2 cups cherry tomatoes, quartered
- 2 Tbsp freshly-squeezed lime juice
- Handful of fresh cilantro leaves, chopped
- Sea salt and ground black pepper, to taste
Instructions
- Season salmon fillets with garlic, sea salt, and pepper on both sides and rub each with avocado oil. Let sit for 15 minutes.
- Heat a grill pan on medium-high heat. Spray with avocado oil.
- Grill salmon for 5-6 minutes on each side, until flaky and grill marks appear.
- Add salsa ingredients to a medium bowl. Toss well, season to taste.
- To serve, top salmon with avocado salsa.
