Grilled Salmon + Avocado Salsa - to try

 




Grilled Salmon + Avocado Salsa


Salmon:

  • 4 salmon fillets
  • 1 tsp granulated garlic 
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2 Tbsp avocado oil 

Avocado salsa:

  • 2 ripe avocados, chopped into small pieces
  • 1 small red onion, small diced
  • 2 cups cherry tomatoes, quartered
  • 2 Tbsp freshly-squeezed lime juice
  • Handful of fresh cilantro leaves, chopped
  • Sea salt and ground black pepper, to taste

Instructions

  1. Season salmon fillets with garlic, sea salt, and pepper on both sides and rub each with avocado oil.  Let sit for 15 minutes.
  2. Heat a grill pan on medium-high heat. Spray with avocado oil.
  3. Grill salmon for 5-6 minutes on each side, until flaky and grill marks appear.
  4. Add salsa ingredients to a medium bowl. Toss well, season to taste.
  5. To serve, top salmon with avocado salsa.
