Miracle Noodles with Almond Butter Sauce - ****

Even better the second day. 

  • 1 Tbsp avocado oil
  • 2 cloves garlic, minced
  • 3 scallions, diced
  • 4 oz broccolini, chopped
  • 1 small carrot, shredded
  • 1/4 Napa cabbage, shredded
  • 1 package Miracle Noodles
  • 2 Tbsp coconut aminos
  • 1 Tbsp unsweetened almond butter
  • 1 tsp sriracha sauce, or to taste, opt.
  •  
  1. Heat avocado oil in a wok or large saucepan on medium heat; add onions and garlic. Cook for 2-3 minutes until softened, then add broccoli, carrot, and cabbage.
  2. Meanwhile, rinse noodles with warm water for 2 minutes, then add to vegetables.
  3. When just about done, add coconut aminos, almond butter, and sriracha. Stir into the vegetables and noodles to create a sauce and warm through.
  4. Serve and enjoy!
