Chicken Thigh Keto Chicken Salad

 




8 chicken thighs, bone in, skin on

1/2 cup keto mayo

1/2 cup chopped dill pickles 

1/2 cup chopped onion

1 heaping Tbsp minced garlic (can sub garlic powder to taste)

Cooking instructions:

Boil thighs till meat falls of the bone (2 hr on medium high heat)

Add 3 tbsp of Redmond's Real Salt to the water while they boil.

When chicken is done, remove the skin and cartilage.  Add meat to a bowl.

Add mayo, pickles, onions, garlic, and salt to taste.

Mix well.

Let chill and enjoy!
