Lemon Egg Loaf *****

 


8 eggs, room temp

8 ounces cream cheese, softened

1 stick butter, softened

2 tsp lemon extract

Monk fruit to taste (I used 144 drops) (or 1 slightly rounded tsp powdered)


Blend together eggs, cream cheese, butter, lemon extract, and monk fruit until smooth and well combined.

Pour the mixture into a 2-quart rectangular baking dish, lined with parchment paper.

Bake at 350 for approximately 25 minutes.  

Cool and refrigerate
