Overnight Oats (without Yogurt) *****

1/2 c rolled oats

1/2 c coconut milk

2 tsp chia seeds

1 tsp hemp seeds

1/4 tsp vanilla extract

1/8 tsp 100% monk fruit powder

Optional toppings: berries, slivered almonds


Measure all ingredients into a glass container; mix well.  

If desired, top with frozen blueberries.

Cover and refrigerate overnight.

In the morning, stir, and add optional toppings.

Overnight Oats *****

 Trying this for the first time, I used coconut milk (1/4 cup diluted with 1/4 cup water, 1 tsp chia seeds, and 1/8 tsp liquid monk fruit.

I just made this for the second time and tried 2 tsp chia seeds.  Really good!


    • ½ cup OG, GF, sprouted rolled oats
    • ½ cup coconut milk (if thick, use 1/4 cup coconut milk & 1/4 cup water)
    • ¼ cup OG A2 yogurt 
    • 1 Tbsp chia seeds 
    • 1 tsp hemp hearts
    • 1/8 tsp powdered monk fruit

  1. Combine: Add all ingredients (oats, liquid, yogurt, chia seeds) into a mason jar or container.

  2. Stir: Mix thoroughly to ensure no dry oats remain.

  3. Soak: Cover and refrigerate for at least 4-5 hours, or overnight.
  4. Top & Serve: Add fruit, nuts, or nut butter in the morning before eating
  5. If too thick, stir in additional milk of choice

  6. Flavor Variations:
  • Apple Cinnamon: 1/2 tsp cinnamon + 1/4 cup diced apples + 1 tsp honey.
  • Blueberry: 1/4 cup fresh or frozen blueberries + 1/4 tsp vanilla extract

Blueberry Chia Seed Pudding *****

 




Ingredients

  • 1 cup coconut milk
  • ½ cup blueberries 
  • ½ teaspoon vanilla
  • 1/8 tsp powdered monk fruit
  • A few drops liquid monk fruit, opt.
  • 3 Tbsp chia seeds

Instructions

  • Add coconut milk, blueberries, monk fruit, and vanilla to a blender and blend until smooth and combined.
  • Add blueberry milk to a mason jar and stir in chia seeds. Let sit for 5 minutes then stir the mixture again to get out any clumps that may have formed. Place mixture in the fridge to set, at least 30 minutes but up to 12 hours.
  • When ready to enjoy, top with fresh blueberries.

Chia Hemp Seed Pudding

 



  • 1 cup coconut milk
  • 3 Tbsp chia seeds
  • 1 Tbsp hulled hemp seeds
  • Monk fruit or honey to taste
  • ½ teaspoon vanilla extract, opt.
  • Organic berries (avoid strawberries)

Instructions

  • Add coconut milk to a blender cup, then add chia seeds, hemp seeds, sweetener and spice. Blend until combined.
  • Pour the chia hemp mixture into a mason jar or other glass container, and refrigerate for 1-2 hours, stirring once after 30 minutes.
  • Top with blueberries and/or other fruit before serving.

Blueberry Chia Yogurt *****

 I tried this with lemon extract instead of vanilla.  It was pretty good, although I added a few extra drops of liquid monk fruit to combat the bitterness of the lemon.  I also tried doubling the recipe, which worked well.


3/4 cup Greek yogurt

1/2 cup blueberries

3 Tbsp chia seeds

1/2 tsp vanilla

1/8 tsp powdered 100% monk fruit


Blend yogurt and blueberries together with vanilla and monk fruit.  Stir in chia seeds.  Place in a mason jar and chill overnight.  Top with extra blueberries, if desired.

Yogurt Chia Seed Pudding *****

 




  • 1 cup plain yogurt
  • ½ cup milk
  • 1/4 cup chia seeds
  • 1/2 tsp vanilla
  • 1/4 tsp 100% Monk Fruit Drops
  • Pinch Real Salt
  • Frozen Wild Blueberries

To a wide-mouth quart mason jar, add yogurt, milk, vanilla, monk fruit and salt.  Stir in chia seeds until well mixed.  Refrigerate.  Five or ten minutes later, stir again.

Refrigerate for several hours or overnight.  

Thaw the blueberries and serve with the pudding.
Or, make a jam out of 1 1/2 cups blueberries mixed with 2 Tbsp water and cooked down in a small saucepan.
