Zoodles with Avocado Sauce - to try

 

  • 3 large Zucchini spiralized
  • 3 cloves Garlic crushed
  • 1 Avocado pitted
  •  cup Cilantro torn
  • ¼ cup Avocado Oil, divided
  • 1 Tbsp Lemon Juice
  • ½ tsp Himalayan Salt
  • Freshly ground Black Pepper to taste
  • Water, as needed
  • Cilantro, to serve
  • Nooch or Vegan Parmesan, to serve


  • Place the spiralized zucchini on a tray lined with paper towel and set aside.
  • In your food processor, add the avocado flesh, cilantro, 2 Tbsp oil, lemon juice, salt, and pepper. Blend to a smooth puree, adding water until the sauce is of pouring consistency.
  • Place a large nonstick frying pan over high heat and add the remaining oil. Add the zucchini noodles and sauté for 2-3 minutes, until tender.
  • Remove from the heat and pour over the avocado sauce.
  • Gently toss together and serve sprinkled with extra cilantro, and vegn parmesan or nooch, if desired.
