Chicken Egg Roll in a Bowl

 



  • 2 Tbsp avocado oil
  • 1 pound ground chicken
  • 1 green onion(sliced or finely minced onion or shallot)
  • 2-3 cloves garlic(finely minced)
  • 1/2 teaspoon freshly grated ginger
  • cups coleslaw
  • 3 Tbsp coconut aminos 
  • 1 Tbsp hot sauce(or to your heat level preference)


  • Heat oil in a large skillet over medium-high heat. Add the chicken and cook 4-5 minutes, breaking it up with the back of a wooden spoon, until no longer pink and cooked through.
  • Add the sliced green onion, garlic, and ginger, and saute for 1-2 minutes. 
  • Add the coleslaw mix, coconut    aminos, and sriracha; stir until well combined. Cook until the coleslaw has softened to your desired tenderness. Adjust seasonings. Serve with sliced green onions.
