- 2 Tbsp avocado oil
- 1 pound ground chicken
- 1 green onion, (sliced or finely minced onion or shallot)
- 2-3 cloves garlic, (finely minced)
- 1/2 teaspoon freshly grated ginger
- 4 cups coleslaw
- 3 Tbsp coconut aminos
- 1 Tbsp hot sauce, (or to your heat level preference)
- Heat oil in a large skillet over medium-high heat. Add the chicken and cook 4-5 minutes, breaking it up with the back of a wooden spoon, until no longer pink and cooked through.
Add the sliced green onion, garlic, and ginger; saute for 1-2 minutes.
Add coleslaw mix, coconut aminos, and hot sauce; stir until well
combined.
Cook until coleslaw has softened to desired tenderness. Adjust
seasonings.
Serve with sliced green onions.
