8 large eggs, room temp
8 oz cream cheese, softened
4 oz (1 stick) butter, softened
2 tsp lemon extract
144 drops 100% monk fruit drops
Preheat oven to 350 degrees F.
Blend eggs, butter, cream cheese, lemon extract, and monk fruit in the blender until mixed.
Pour into a 2-quart rectangular glass baking dish lined with parchment.
Bake for 35 minutes or until done.
Refrigerate and serve when cooled.
