Cilantro Avocado Slaw


Cilantro Avocado Slaw
This is my favorite slaw - great in tacos, but on its own too! The dressing is great for green salads too!

1 head cabbage sliced very thin* (see note below)

Dressing:
1 bunch cilantro, even the stems! chopped in food processor or blender
Then add:
1 avocado
Juice 1-2 limes
3/4 cup avocado mayo
3/4 cup coconut milk
1 Tbsp Lakanto Golden Monkfruit (or sweetener of choice)
Salt, garlic powder, couple squirts Sriracha
Taste for seasonings them add to cabbage - I usually seem to add addl’ salt, lime, sriracha

*Before I add dressing, I like to sprinkle salt over the sliced cabbage, mix it up by hand, in fact massage it for a few minutes to really get the salt into the cabbage and then let it sit for 15+ minutes while you prepare the rest of the ingredients. Then take handfuls and squeeze the water out of it. This is not necessary but it keeps from “weeping” and making the sauce watery after it sits. It also makes the cabbage a little more tender, which I prefer. Look at the pictures to see what a difference it makes in volume!!
