- 12 hard-boiled pastured eggs
- 6 slices bacon, crumbled
- 3/4 cup avocado oil mayonnaise
- 1/4 cup diced scallions, green part only
- 1 Tbsp Dijon mustard
- 1/4 tsp smoked paprika
- 1/4 tsp sea salt
- Romaine lettuce leaves
Instructions

Peel and chop eggs and place them in a large bowl.

Add remaining ingredients to the same bowl.

Stir and combine.

Top with extra bacon and refrigerate until ready to serve in romaine leaves
