Really good. The second time I made it, I cooked the whole two pounds of beef/pork, but only made half of the recipe. I used the remaining meat for other meals or for eating plain.
1 lb ground beef
1 lb ground pork
7 eggs
1/4 cup coconut milk or heavy cream
Seasoning (salt, garlic) to taste
2 cups shredded Kerrygold Reserve Cheddar cheese
Preheat oven to 375 degrees.
Place beef and pork in a large cast iron skillet. Season with salt and garlic powder.
In a bowl, whisk eggs and coconut milk or heavy cream, along with salt to taste.
Place meat in an 11 x 7" baking dish. Pour egg mixture over top. Top with shredded cheese.
Bake for 25 minutes.
2/1/24
4 large eggs, room temp
4 Tbsp softened butter
4 oz softened cream cheese
1 tsp lemon extract
72 drops 100% monk fruit drops
Blend eggs, butter, cream cheese, lemon extract, and monk fruit in the blender until mixed.
I tried this with ricotta instead of cream cheese and Kerrygold Reserve Cheddar instead of mozzarella. It was good but nothing special. I used too much parmesan. Will try again with cream cheese, mozz, and less parm.
1 lb ground beef
8 oz cream cheese
3 Eggs
Grated mozzarella
Grated parmesan
Heat a cast iron skillet. Brown the ground beef.
Stir in cream cheese.
Beat eggs and pour over the ground beef mixture, spreading evenly over the top, so that all of the ground beef is covered.
Top with grated mozzarella and parmesan.
Bake at 375 degrees for about 25 minutes, until a knife comes out clean.
