I have my first cold since starting on a plant-based diet. I had big cooking plans today but didn't feel up to doing any of it. Hopefully, this cold will be short-lived.
Breakfast: Oatmeal cooked in the Instant Pot with bananas and apples, then served with strawberries, raspberries, and blueberries
Lunch: Leftover Portobellos & Spinach over Brown Rice (no picture - the kids had borrowed my iPad at the time!)

Dinner: One Pot Pasta
