Simple Cole Slaw - To Try





My Mom’s Simple Cole Slaw
Time 15 min
Yield 8 servings

4 C  fresh shredded green cabbage
3 or ¼  C chopped green scallions (whole scallion)
½ C  freshly grated carrots
1  clove or 1t crushed garlic

Dressing:
2T  Extra Virgin Olive Oil
2T  Freshly squeezed lemon juice
2 to 3 pinches sea salt
¼ t dried dill

*optional, I do not use & suggest adding after the slaw has been mixed; a bit at a time. 
2 or 3 drops stevia or pure monk fruit sweetener

Place cabbage, carrots, onion in a large bowl. Mix dressing ingredients with a fork and pour over cabbage mixture and toss. Serve room temperature or cold. I would suggest letting it sit for half an hour or so for the flavors to meld, before serving.
