Breakfast: Apple Pumpkin Oatmeal to Go




Lunch: Hearty Vegetable Soup
Frozen Black Cherry Cacao

Dinner: Taco Salad
Romaine, grape tomatoes, black beans, roasted corn, refried beans, chipotle powder, Cheeze Sauce, salsa, tortilla chips

I started making tortilla chips by just putting the corn tortillas on a baking sheet at 400 degrees and baking for 8-10 minutes, and then breaking them after they bake.  I don't miss the salt at all!


Ice Cream: pineapple, banana, and raspberries with coconut and vanilla extracts in the Cuisinart Ice Cream Maker.  Better than any so-called real ice cream I ever had!
