Egg Salad Cups


2 hard-boiled pastured eggs

1 Tbsp avocado mayonnaise

1 oz avocado

A squeeze of lemon juice

1 oz chopped chives

Sea salt to taste

2 oz butter or romaine lettuce





Chop eggs and mix with mayo, avocado, lemon juice, and chives.  Add sea salt.  Serve on a bed of lettuce.
